Pumpkin Patch

With Halloween just around the corner, I couldn’t think of a better way to get into the holiday spirit than going to a proper pumpkin patch and carving pumpkins. Everything about this day reminded me why Halloween is one of my favorite holidays: the calm autumn weather, the scarecrows lining the rows of pumpkins, finding the most creative ways to carve your pumpkin, and the salty, toasted pumpkin seeds.

leftover pumpkin seeds

2 tablespoons olive oil

salt

Preheat oven to 325 degrees

After removing the pumpkin innards, separate seeds from the stringy core and place them in a pan lined with parchment paper

Drizzle with olive oil and sprinkle with salt

Bake 45 minutes stirring occasionally until toasted and slightly browned
